No Bake Raspberry Cheesecake
If your sweet tooth is anything like mine than you probably want a dessert you can whip up pretty quickly. This recipe gives you all of the satisfaction of a cheesecake, but can be done in 20 minutes! This recipe works in a medium sized bowl or can be separated into mason jars for individual cheesecakes!
We took the mason jar version on a picnic and it was perfect!
So let's get to it! I didn't take pictures while prepping the mason jar ones because as you can imagine I was running around getting everything ready, but the process is the same for both so lets dive in.
Ingredients:
Crust:
1 Packet Graham crackers
4 TBSP Butter melted
3 TBSP Brown Sugar
Dash of salt
Cheesecake filling:
1 cup heavy cream
1 Packet cream cheese
1 1/2 tsp vanilla
3/4 cup powdered sugar
Raspberry topping
2 cups raspberries
3/4 cup sugar
2 TBSP lemon juice
1 TBSP cornstarch mixed in 2 TBSP water
Instructions:
Pulverize graham crackers in blender or food processor. I use my Vitamix for all of the mixing in this recipe.
Place in bowl and stir in sugar and salt. Add the melted butter. Transfer to your jars or bowl and pat the crust down.
Add heavy cream to your blender or kitchen aid. Mix on low speed initially then gradually move up. Be careful not to over whip the cream. You just want a thickened consistency.
Add cream cheese, vanilla, and powdered sugar. Blend on medium speed.
Layer this mixture on top of the graham cracker crust.
To make the berry topping add the rasperries, sugar, and lemon juice to a pan. And heat while stirring for 3-5 minutes. Once your berries have broken down add the corn starch mixture and continue stirring over heat for another minute.
Remove the berry topping from the heat and let cool for a few minutes.
Pour the topping right on top and you have a delicious and easy peasy cheesecake!! Eat right away or chill for an hour, the choice is yours!
Tip: Add the cream cheese in increments to achieve the texture you like. Using 1/2 to 3/4 the amount of cream cheese cuts the calories and creates a thinner texture that is also delicious. The full amount gives you the texture you'd expect. Try it both ways and let me know your favorite.
