No Bake Raspberry Cheesecake

Image
If your sweet tooth is anything like mine than you probably want a dessert you can whip up pretty quickly. This recipe gives you all of the satisfaction of a cheesecake, but can be done in 20 minutes! This recipe works in a medium sized bowl or can be separated into mason jars for individual cheesecakes!  We took the mason jar version on a picnic and it was perfect!  So let's get to it! I didn't take pictures while prepping the mason jar ones because as you can imagine I was running around getting everything ready, but the process is the same for both so lets dive in. Ingredients:  Crust: 1 Packet Graham crackers  4 TBSP Butter melted  3 TBSP Brown Sugar Dash of salt Cheesecake filling: 1 cup heavy cream 1 Packet cream cheese 1 1/2 tsp vanilla 3/4 cup powdered sugar Raspberry topping 2 cups raspberries 3/4 cup sugar 2 TBSP lemon juice 1 TBSP cornstarch mixed in 2 TBSP water Instructions: Pulverize graham crackers i...

Banana Raspberry perfection

Image
I have a huge sweet tooth and I also love to create in the kitchen, but lately (as in I started a few days ago) I've been trying really hard to avoid added sugars. So this morning in the kitchen I experimented and came up with the perfect smoothie for my fellow sweet tooth friends. I get that there's tons of sugar in fruit, but it beats brownies so I'm counting it as a win. So here we go. Ingredients:  2 frozen bananas 1 1/2 handfuls of raspberries  Add water until you reach desired consistency Once you've blended your smoothie you can stop and enjoy or keep adding. This really makes a great base smoothie. I added a handful of spinach, a spoonful of chia seeds, and a spoonful of flaxseed when I ate it for breakfast. You could also add yogurt, kale, or broccoli. Eat it with just the two ingredients or keep adding to your hearts content either way let me know how you like it in the comments below. Happy Blending.

Staging The Perfect Romantic Dinner

Image
Let's talk about setting the stage for a romantic evening. It doesn't have to be Valentine's. One of the biggest reasons. My husband and I chose this apartment was this roof deck. Views make dates so dreamy. For the same reason Everytime we go to a restaurant with a view we make sure to get a window seat. I swear it makes the food taste better! With the view taken care of this look was actually really cheap to create! Dining set I bought the table at a steal during the off season for $479. Right now it's going for $779 which is still a great price!  The table set wasn't purchased for this one event it's actually our main dining space that we will use over and over again. I don't have a link to the flower vase because it was a THRIFT STORE PURCHASE for $4.50, but vases are a super common thing to find at thrift stores so give it a shot. The flowers in the vase were a $10 boquet from Walmart which can only be bought in store so no link for those ...

Summer Picnic

Image
I think we can all agree that getting outside is more important to our mental health now more than ever. Picnics are a great way to change up the everyday routine. I've compiled some tips and items you'll want, to host the perfect summer picnic. Location: Getting to the location of this picnic was a labor of love. Usually I would highly recommend going somewhere with some sort of view like the beach, a lake, a mountaintop, gardens, etc. However, right now while things are closed you may be surprised to find out that your favorite view is not accessible. We originally planned to go to this viewpoint in the Santa Cruz Mountains. We drove up only to find that it was closed off. Determined, we decided to check out Castle Rock State Park which was also closed. As a last resort in the area we headed towards Montalvo Arts Center to find that it was open, but was currently not allowing picnics. With a baby crying in the back we decided to just head towards a par...
