Eggplant Pizza
My husband could eat pizza everyday for the rest of his life and he would die a healthy and happy man. If I eat pizza everyday for the rest of my life I will die a balloon with cardiovascular disease. That doesn't stop my husband from requesting pizza so I came up with a healthier version that he'll accept on the menu!
This really is a shockingly simple recipe that you can make over and over. I served it with baked zucchini sticks. If you've got a hungry husband like I do you may want to include another side of brown rice, beans, or meat 😂
1 eggplant
1 boneless chicken breast
1 tomato
1/4 tsp Garlic powder
1/4 tsp Salt
1/4 tsp Oregano
2 TBSP Olive oil
1/4 cup Pizza sauce
1/4 cup Mozzarella Cheese
1. Preheat your oven to 400° and cut your eggplant into round 1/4-in to 1/2-in slices.
2. Brush the eggplant on both sides with olive oil and place on pan. Sprinkle on salt and place in the oven.
3. While the eggplant is baking heat a pan with olive oil. Cut up your tomato in small cubes and add it to the pan.
4. While the tomatoes are cooking cut up thawed chicken and cubes. Keep an eye on the tomatoes stir occasionally. As they begin to brown add the chicken to the pan.
5. As the ingredients cook add salt, garlic, and oregano.
6. Check on your eggplant. Once it has turn darker on both sides pull out of the oven and put a spoonful of tomato sauce on each round.
7. Add mozzarella and then sprinkle with the chicken tomato topping.
8. Place your baking pan back in the oven and cook for an additional 5 minutes. Serve warm and enjoy.
