A spring brunch
Covid-19 has us all sheltering in place until April 7th, but we can still find joy and celebrate each day.
This spur of the moment brunch was just what the doctor ordered to lift our moods today. And it was so easy to whip together!
A recipe for these Almond Milk mini pancakes stacks is coming soon! They took 10-15 and were so delicious.
The parfaits were the star of the show! The stores were out of soo much food amid the pandemic concerns, but I snagged some small yogurt cups and granola and was able to create this yummy parfait. There was no fresh fruit to be found, but luckily I always have frozen fruit in my freezer for smoothies. A 5 minute recipe will be linked soon!
Since we're on lockdown it was just my husband and I so we made it a date! Let's talk about essentials for a brunch!
There aren't too many rules, but you want variety! Think different colors, shapes, and textures. Again with the frozen fruit. I thawed out some peaches, mango, strawberries, and blueberries to be used as toppings and to add color. I bought cheap muffins and donuts that all bakery sections carry. Again the store had basically nothing else. I planted them on square plastic plates from Target and voila. Instantly beautiful.
I like to fill in extra spaces with candles even though we didn't light them. Add everything you need for dining including charger plates, plates, utensils, cups, coasters. Then add a centerpiece and you're set. I'm growing strawberries and decided to use those as my centerpiece. If you don't have a dining space you love grab a blanket and recreate this look at a park!
